Peanut Butter Cupcakes


Hey everyone!  It's me again!  This past weekend I wanted to make some cupcakes really bad.  I've been filling up on everything pumpkin over the past few weeks, so I thought it was for the best to try something different.  I got my inspiration for this from a blog called My Happy Place.  I love all of her recipes!  Definitely check her out, she's a great person, photographer, and baker!  I really look up to her and her blog.

I'll leave the recipe I used at the bottom of the page, so try it out!

First of all, let me introduce you to today's baking assistant, his name is Justin.  He likes food and duck faces :)  He was helping me make this since my mother was gone and I needed "supervision" with the oven.  Even though he's like 11.   


I had just gotten home from a 5k run earlier that morning, so it was time to completely ruin it.  That's why my face is painted and stuff.

Since it's almost Christmas time, (I know, it's a stretch) I thought it was about time to break out the Santa apron - ohhh yesss!



So after lots of stirring, baking, cooling, and icing, we got some pretty amazing cupcakes!





We had a whole lot of fun making (and eating) these!  They are to die for!  The icing is just plain fabulous!  It tastes so professional and creamy.  We had milk out of wine glasses too!  It was a blast :).  Even Justin, who doesn't like cheese or peanut butter, loved it! See?



While we were waiting for things to bake, we listened to a whole lot of Justin Bieber.  Beliebers unite!  This new music video for Beauty and A Beat is honestly phenomenal.  I'm not exactly a fan of Nicki Minaj, but she has a nice voice.   Justin himself filmed it!  There's minimal cuts and such.  It's very creative and well done!  I even took a picture of our computer screen, since it played a large role in the making of these cupcakes.

Here's the recipe I used for these cupcakes.  Oh, and you can also use it on brownies, cookies, cakes, whatever you like.  I think it would go best on something chocolate, though.

Frosting

1 c.  whipped cream cheese
1 1/2 c. creamy peanut butter
1/2 c. milk
2 c. powdered sugar
sprinkle of salt (to taste)
*you can also add chopped peanuts as a garnish on top

Stir all of the ingredients together in large mixing bowl until smooth.
